Gwyneth Paltrow Recipe 5 : Sweet Potato & Spice Muffins


Hands down one of my favorite recipes from the Gwyneth book, has been her Sweet Potato & Five Spice muffins. Disclaimer : I could not find the "five spice" mixture she references in her book at Whole Foods so I simply just used cinnamon. Even with just the cinnamon I gobbled them up faster than what Gwyneth would deem healthy. So with no further delay...here is how you can make your own!

What You'll Need : [Makes 12 muffins]

1] 1 large sweet potato
2] 1/2 cup of extra virgin olive oil
3] 1/2 cup of unsweetened almond milk
4] 3/4 cup of maple syrup, plus extra for brushing the tops
5] 1 teaspoon of pure vanilla extract
6] 2 cups of flour [Gwyneth recommends gluten free]
7] 2 teaspoons of baking soda
8] 2 teaspoons of baking powder
9] 1 1/2 tablespoon of Chinese five-spice powder [or if you're like me; cinnamon]
10] 1/2 teaspoon sea salt

To Make :

Preheat your oven to 400 F. Prick the sweet potato a few times and bake until soft [this should take about an hour.] 

Peel the sweet potato & discard the skin. Mash the potato into a mixing bowl. Whisk the oil, milk, maple syrup, and vanilla in with your potato. In a separate bowl, whisk the flour, baking powder, baking soda, and spices/salt. Fold the dry ingredients in with the wet.

Evenly distribute the mixture into your muffin tin. Bake for approximately 20-25 minutes. Brush the tops with your remainder maple syrup during the last five minutes.
