Little Heirlooms

 
 
The other week as I was making my usual round through Trader Joe's trying to only pick up what I needed from my list; (and convince myself that no, I did not need the second bouquet of peonies - I somehow ALWAYS convince myself I need the second bouquet of peonies.) I stopped in front of these little summer gems and just couldn't say no. I'm a big fan of adding fresh tomatoes to any pasta dish I make, and these miniature heirloom tomatoes just looked so enticing. I spent the next few days trying to decide the best way to prepare them, and after talking with my brilliant co-worker Dani decided on the simplest recipe possible. This little dish is perfect to add as a side to another meal, or to just eat on its own on hot summer nights (providing you love tomatoes as much as I do!)

Ingredients:
(1) Miniature heirloom tomatoes
(2) Olive Oil
(3) Goat Cheese (I purchased a garlic and herb cheese to add a little extra flavor)
(4) Fresh herbs
(5) Salt & Pepper

Keeping the recipe so light allows for all the flavors of the tomatoes to come through. With heirlooms, each tomato has a unique flavor. I particularly prefer the small greenish/yellow ones :)
